3 Easy Desserts for When You're in a Pinch
I can't tell you how many times I've waited until the last minute to make desserts for my dinner guests. I get caught up in the main course and forget all about the sweet treat I've planned for the end. Since this has happened to me a few times, I thought I'd share my go to desserts when I'm running behind and looking for an easy solution to my dessert dilemma.
1. Three Ingredient Peanut Butter Cookies -
I love that these cookies only have three ingredients: eggs, sugar, and of course, peanut butter. I can have a batch of cookies cooling on my counter in about 20 minutes. The other great thing about these cookies is that they're naturally gluten free. I have some close friends who follow gluten free diets, and these cookies are great to have on hand when they stop by for a visit. I use a recipe from Feel Good Foodie Blog. 2. Ice Cream with Homemade Toppings -
I know storebought ice cream can seem like a bit of a copout. And believe me, I'm all for homemade ice cream! But in a pinch ice cream can be a great option to serve your guests, especially if you add homemade toppings. Below is a list of toppings that I like to use.
Fresh fruit (blueberries, raspberries, strawberries, peaches, etc.)
Chocolate chips
Ground nuts (peanuts, almonds, walnuts, pecans, etc.)
Crushed cookie crumbles
Hot fudge (I found a recipe that doesn't use chocolate chips from Chocolate, Chocolate, and More Blog. It comes in handy because Lord only knows if I'll have chocolate chips in my pantry. I've been known to go begging for them at the neighbor's door a time or two. You can check out the recipe here.)
3. Fresh Fruit and Whipped Cream -
